Starting with CvC2 (season 4) most seasons have at least one returning AU player, so hard to avoid previous spoilers. I would definitely start with 2016 (Season one of the current cannon) it's easily my favorite season of AU Survivor and one of my all time favorite seasons of any version of Survivor.
If everyone was available I would of swapped: Ross for Tarzan Sarah for Jacqui Shaun for Locky (I was originally gonna keep locky on the cast because I like him as a character and find him unintentionally hilarious, also his rivalry with mat had me in stitches, however hes kind of a boring gameplayer and i think Shaun would make for a more entertaining season.)

Every Reddit post is about how terrible S5 is going. S5 has had big players playing a decent game. It is much better than many US seasons.
